Select Start > Settings > Personalization > Colors, and then choose your own color, or let Windows pull an accent color from your background. Change desktop colors. Use the Windows 10 Settings app to change your desktop background color.
Dark Mode in Word - Microsoft Support
You can disable the dark page background in Dark Mode and keep the page light. Go to File > Options > General > Personalize your copy of Microsoft Office. By the Office Theme color selection box, select the checkbox for Never change the document page color. Select OK to return to your document.

Add, change, or delete the background color in Word
Windows macOS. To add some extra visual interest to your document, add a background color using the Page Color button. You can also add a watermark. Add or change the background color. Go to Design > Page Color. Choose the color you want under Theme Colors or Standard Colors.

Dark Mode in Outlook - Microsoft Support
When reading a message, you can turn dark mode on or off by using the icon at the top of the message window. Select the sun icon to change the message window background to white. Select the moon icon to change the message window background to black.
