You can customize the ribbon by:

Adding, removing, or rearranging tabs on the ribbon

Adding, removing, or rearranging individual commands on the ribbon
-
Adding, removing, or rearranging groups of commands on the ribbon
To customize the ribbon in classic Outlook:

Right-click anywhere on the ribbon, then select Customize the Ribbon.

Open the Choose commands from list, then select the list of commands you want to pick from.
Tips:
-
In the list on the right side of the dialog, any element preceded by a chevron > can be expanded by simply selecting it. Then you'll see all the elements it contains.

To add a missing command, you can select it in the left list, then select the Add button.

To remove a command, you can select it in the right list, then select the Remove button.

To hide an existing tab, in the list on the right side, clear the tab's check box.

You can make the ribbon larger (the classic experience) or smaller (the simplified experience) inĀ new OutlookĀ for Windows:

In Mail, on the View tab, select Ribbon, then select the ribbon experience you prefer.
When you use the simplified ribbon in new Outlook, you can personalize the commands you see:

Select the tab on the ribbon that you want to customize.

At the right end, selectĀ Ā More Options >Ā Customize.

In the Customize dialog, you can remove an existing command. Or you can drag a command from the Buttons section to the existing group that you want to add that button to. You can also create a new group on the tab and then add buttons to it.Ā

Select Save when you're done making changes.
You can customize the ribbon in Outlook for Mac, by adding, removing, or rearranging commands on the toolbar.

On the View menu, select Customize the Ribbon.

Drag items from the list of options and drop them onto the ribbon.

Select DoneĀ when you've finished making changes.
