Chat keeps track of people you've chatted with, and you can search more. The list is not the same as the phone contacts list.

On the left pane, select

Note: When a new chat first opens, there are a list of past contacts below the To: field. -
Select the To: field and type a name to find.

Choose the name you want and start chatting.
