You need to mark which folders should be accessible by Outlook Mobile. To do that:

Open Gmail and tap Settings (gear icon) in the top right > See All Settings > Labels

Toggle the checkmarks from the "Show in IMAP" option for each label you wish to show or hide within Outlook Mobile

The list organizes into three sections: System labels, Categories, and Labels (The last section is where your custom labels appear)
