You can customize your OneNote App, the way you want it. You can navigate to Me Control (the circle icon with your account image in the upper left)> Settings to change the app settings and customize it according to your needs.
Update your default section to take Quick Notes

Go to Me Control and tap on Settings.

In the Notebooks section, select Default section to get a list of sections in your default Notebook.

You can either select any other section in the same notebook on tap on the back icon next to the notebook name to navigate to another notebook.

Tap on the back icon to select another notebook and navigate to select another default section to create new notes within that notebook.
Update your primary Sticky Notes account

Go to Me Control and tap on Settings.

In the Sticky Notes section, select the option Primary Sticky Notes account.

Tap on it to select the list of accounts you have signed in with in the app.

The default account appears in the list with the radio button on. Tap on any account to make it the default.
Create notes from anywhere outside the app using widgets

Go to Me Control and tap on Settings.

In the General Settings section, toggle the option OneNote badge to on to enable the floating badge outside app.

Tap on the badge icon to start taking a note anywhere outside the app. The note gets saved in the default section in the app.
3. Tap on Add OneNote badge to Home screen to add a shortcut to Home screen.
Update your app's theme

Go to Me Control and tap on Settings.

In the General Settings section, click on Theme.

Select the Dark, Light, or System Theme option.
