Select the existing page title (it's above the page date), and then type a new one.
The name in the page tab list changes to match the title at the top.

Images in titles aren't supported, but you can use symbol font characters. The character shows on the title, but in the page list displays as the standard font value. For more info, see Insert a symbol in OneNote.
