In OneNote for Mac, you can change the color of any section tab in your notebook — either for aesthetic purposes or to visually categorize your notebook content in OneNote in the same way you might differentiate the sections of a traditional paper notebook.

Change the color of a notebook section tab
Do the following:

Control-click the tab of the section whose color you want to change, point to Section Color, and then click the color you want.
If you change your mind and you want to apply a different color to the same section, repeat the previous steps with a different selection.
Tip: If you want, you can also change the background color of pages in any of your notebook sections.
Remove the color from a notebook section tab
Do the following:

Control-click the tab of the section whose color you want to remove, point to Section Color, and then click None.
