On the File tab in classic Outlook, select Options.

On the left, select Mail.

Next to Compose messages in this format, select the drop-down arrow and then select your preference: HTML, Rich Text, or Plain Text.

Select OK to save your changes.

On the View tab in New Outlook, select View settings.

Select Mail and choose Compose and reply.

Under Message format, next to Compose messages in, select the drop-down arrow and then choose your preference: HTML or Plain Text.

Select Save to save your changes.
