Right-click the picture containing the text you'd like to copy.

Select Copy Text from Picture.

Click where you’d like to paste the copied text, and then press Ctrl+V.
Copying text from pictures isn't currently possible in OneNote for the web. You can, however, use the OneNote desktop app which supports Optical Character Recognition (OCR), and lets you copy text from pictures or scanned images.

To open the desktop app, at the top of the ribbon, select Editing > Open in Desktop App.

Control-click the picture containing the text you'd like to copy.
