Verify the digital signature on a signed email message
Open the digitally signed message. Look at the Signed By status line to check the email address of the person who signed the message. It isn't enough to check the email address in the From line—you want to verify who actually signed the message, not only who sent the message.

When you sign a signature line, you add a visible representation of your signature and a digital signature. In the file, right-click the signature line and choose Sign.

Can I change my email signature? - Microsoft Support
Yes, you can change your signature for each account or have one signature for all of your accounts. To edit your signature: Open Settings. Under Mail, tap Signature. Enter your signature or switch the toggle to enable Per Account Signature, and then enter signatures for each of your accounts.
