On the Outlook menu, select Settings... > Spelling & Typing.
In the right pane of the Spelling & Typing window, under Automatic Corrections and Typing Substitutions, you can turn on or off the Correct Spelling Automatically, Smart Quotes, Smart Dashes, Text Replacement toggles.
