Microsoft Simplified Chinese IME - Microsoft Support
V-mode input can be used to input Chinese format numbers, dates, times, formulas, and more. It also supports inputting Unicode and GB-18030 code points. When in Double Pinyin mode, V-mode can be triggered by pressing Shift + V. Find this feature in IME settings > Advanced.

Language packs for Windows - Microsoft Support
Use the Add a language feature to install another language for Windows 11 to view menus, dialog boxes, and supported apps and websites in that language. To do this: Select Start > Settings > Time & language > Language & region. Go to Preferred languages, select Add a language.
Choose text encoding when you open and save files
For example, Unicode enables you to create a Traditional Chinese language document on your English-language system. However, if the document will be opened in a Traditional Chinese language program that does not support Unicode, you can save the document with Chinese Traditional (Big5) encoding.

Turn on East Asian language features in Office for Mac
Open any Microsoft 365 for Mac application. For example, Word. Click the Word menu, or the menu for the Microsoft 365 application you opened, and then select Preferences. Under Authoring and Proofing Tools, click East Asian Languages. Select Japanese, Simplified Chinese, or Traditional Chinese.
