View email messages by conversation in Outlook - Microsoft Support
View messages grouped by conversation in new Outlook. At the top of the page, select Settings > Mail > Layout. Under Message organization, choose either of the options depending on whether you want to show email grouped by conversation or as individual message.

Getting started with the new Outlook for Windows
If you're using Windows Mail and Calendar and your accounts are supported in new Outlook, you will see a toggle in the upper right of the Mail app in Windows 10 and 11 to Try the new Outlook . This option downloads the new app and switches your preferred email client.
