In a desktop version of Excel, select File > New and search for accessible templates using the Search for online templates field.
In macOS, Select File > New from Template, and then search for an accessible template.
Select an accessible template, and then select Create to create a workbook based on it.

There's plenty of white space around all of the text in the template, so it's easier to read.
The colors contrast well, so they're easy to distinguish.
